Icewine is an intensely sweet dessert wine balanced with fine acidity. It may be served entirely on its own or with fresh fruit, young soft cheeses or desserts that are not too sweet. Fruit-based desserts such as peach cobbler, cheesecakes or most unsweetened fruit pies and cakes are wonderful accompaniments to Icewine. Calona's VQA Icewines have delightful aromas of apple, peach, papaya, apricot, guava, mango, passion fruit, pineapple and toffee.
Icewine should be served well chilled (4° to 8°C/38° to 47°F) and served in portions of about 40 ml (1-1/2 oz) per person. For best results chill the bottle in a bucket of ice for 15 minutes or refrigerate for 2 hours before serving. Once opened, Icewine will keep for several weeks if properly sealed and refrigerated.
Calona's VQA Icewines are ready to enjoy when you first purchase them but will reward with even greater complexity if cellared for 5 to 8 years. Icewine should be carefully cellared in a cool, vibration-free area away from direct sunlight and temperature changes. Do not store Icewine in the refrigerator.
